5 Unique Uses for Pumpkin This Fall

Every fall, we see the grocery store shelves fill up with loads of pumpkin purée so that everyone can make a pumpkin pie.

Well, I’m here to tell you that their are many more innovative uses for pumpkin than just pie. In my opinion, pumpkin literally makes everything more delicious and festive. In addition to it’s taste and versatility, it’s really healthy too! That can of puree you see at the store has vitamins A, C, K, and fiber.

To make it easy, I’m going to use 5 already existing Everything Erica favorites and add pumpkin for a unique and yummy twist!

1) Pumpkin Hummus: Just add a 15 oz can of pumpkin to this hummus recipe and top with toasted pumpkin seeds for added fun!

2) Pumpkin BBQ Sauce: Take this Everything Erica classic BBQ sauce and simply substitute out the balsamic vinegar for a half of a can of pumpkin for an exciting twist on a spicy bbq classic. Delish!

3) Pumpkin Risotto: Simply take my pea and parmesan risotto and pour in a half a can of pumpkin instead of the truffle and peas at the end. Top with some caramelized walnuts for yummy added texture.

4) Pumpkin Chia Seed Pudding: My chia seed pudding recipe has been a hit! To make it festive for fall, make the pudding as usual, and right before you eat it, stir a little bit of pumpkin puree and pumpkin pie spice into it! Yum!

5) Pumpkin Ravioli: I love making homemade pasta. Last year, my butternut squash ravioli caused a buzz on Everything Erica. If you loved that, try replacing the butternut squash with pumpkin puree. You can top them with a sage cream sauce or a brown butter sauce. Yum!

If you’ve been following my blog over the last year, these recipes should be nothing new to you! Remember, as the seasons change, use my recipes as a blank canvas and inject yummy seasonal ingredients into them to shake them up. Cooking is all about improvising and having fun.
