Sweet Potato Breakfast Hash (Paleo/Whole 30 Friendly)

When it comes to breakfast, I have always had a hard time eating healthy. I’m not much of an egg person and I feel like that only leaves me with carb-heavy options like waffles, pancakes and muffins.

Recently, I’ve been really focused on shedding these last 10lbs of baby weight, so I’ve had to start thinking of breakfast dishes that were low-car, high-protein and dairy-free. Once I created this sweet potato hash, having a healthy, nutrient dense, breakfast became a whole lot easier (and more delicious).

Sweet Potato Breakfast Hash (Paleo/Whole 30 Friendly)

This sweet potato hash will allow you to have a healthy, nutrient dense, breakfast!

Ingredients Method

Ingredients
  

  • 1 tsp Ghee
  • 1 Sweet Potato peeled and diced into small pieces
  • 1/4 Yellow Onion diced
  • 1/2 Bell Pepper diced
  • 3 oz Favorite Sausage make sure there is no added sugar
  • 1/2 Avocado

Method
 

  1. Melt the Ghee over medium heat. Add your sweet potatoes and cook for 5 minutes or until they start to soften.
  2. Add your onions and peppers and cook for another 3 minutes until they start to soften.
  3. Add your sausage and cook until it’s done.
  4. Serve warm topped with fresh slices of avocado.

You can get this breakfast done in under 15 minutes and if you prep all your veggies the night before, you can do it about 10 minutes!

Who knew eating whole, healthy ingredients could be this easy? 🙂
