Peanut Butter and Jelly Stuffed French Toast

Elia’s eating habits have been inspiring a lot of the recipes that I’ve been creating for our family. Her newfound love of PB & J sandwiches is to blame for this sweet and savory Peanut Butter and Jelly French Toast.

I must admit, I even impressed myself with this one, especially considering it took me less than 20 minutes from start to finish. A total mom win! This beauty isn’ just for kids either. You can make this an elevated brunch dish and easily mix and match different types of nut butters/jams/fruits to make it uniquely yours.

Peanut Butter and Jelly Stuffed French Toast

This savory peanut butter and jelly french toast is easy to make and perfect for all ages!

Ingredients

  • 2 Eggs
  • 1/4 cup Milk
  • Peanut Butter
  • Jelly I chose grape
  • 1 tbsp Butter
  • 4 slices Bread I like Brownberry Oatnut bread for this

Instructions

  • Spread peanut butter on one slice of bread and jelly onto another. Form a sandwich, and set aside. Basically, just make a pb&j sandwich!
  • In a bowl, crack both eggs and whisk together with milk.
  • Dip the sandwich in the egg and milk mixture. Make sure to really coat both sides.
  • In a pan over medium heat, melt the butter. Once the butter is melted and hot, add the sandwich. You should hear a sizzle.
  • Cook for about 3-4 minutes on each side (until golden). I recommend keeping it on medium heat and letting it cook gradually to ensure the contents melt.
  • When its all cooked, slice and serve topped with whatever you’re in the mood for. I chose banana and powdered sugar, yum!
