5 Dinner Recipes for just $50!

It’s no surprise that Peapod has become a staple in our house. Between the incredible quality and the convenience, using Peapod for all your grocery needs is a win-win for everyone. Especially this mama’s sanity.

I was challenged to create a weeks worth of meals for just $50 (an average of $10 per meal)! Browsing through Peapod, I couldn’t believe how inexpensive and easy it was to find ingredients to truly put these recipes over the top. On top of it, I was able to include an ingredient from a local Chicago company in each dish!

Peapod recently started a campaign called From The Pod where they offer you ingredients from local companies specific to your area. As someone who has always been a supporter of shopping local I knew I had to incorporate some Chicago flare into these dishes.

Thanks to Peapod and From the Pod I was able to easily throw together 5 not so ordinary recipes that would impress even the biggest of foodies. Give one of these a try or even add your own twist to them and let me know what you think!

Mango Brie Sandwich

What You’ll Need:
1 mango
1 package of brie
1 package of garlic cheese spread
1 onion
1 package of Il Mulino Di Valenzano bakery bread

What You’ll Do:
1. Start by caramelizing an onion, while that cooks add garlic cheese spread to your slices of bread
2. Slice up a mango and add pieces to the sandwich.
3. Place a large slice of brie on the mango slices and top with your caramelized onions.
4. Toast in a pan until the cheese has melted.
5. Enjoy the gooey delicousness!

Fajita Chicken Tacos

What You’ll Need:
1 onion
1 green pepper
1 package of Frontera skillet sauce
Crimini mushrooms
Chicken breast
1 package of tortillas

What You’ll Do:
1. Cube the desired amount of chicken and allow to cook in skillet.
2. While the chicken cooks, slice up your green pepper, crimini mushrooms, and white onion, set aside
3. Once the chicken has cooked add veggies.
4. Drizzle the Frontera skillet sauce, let simmer. Move contents to a separate bowl.
5. Heat a tortilla on the skillet, fill with the amazing filling and bite into a mouthful of flavor!

Buffalo Chicken Lettuce Cups

What You’ll Need:
1 pakcage of Gothan Greens butterhead lettuce
1 bottle of buffalo sauce
Ranch, or blue cheese dressing
Chicken breast
Celery
Carrots

What You’ll Do:
1. Cube the chicken breast and add to skillet to cook.
2.  While chicken cooks, peel and julienne carrots and chop up celery, set aside.
3. Pour buffalo sauce into skillet with cooked chicken and allow to simmer.
4. Assemble butterhead lettuce on a plate.
5. Add the buffalo chicken, top with celery and carrots, and drizzle with dressing of your choice.

Pesto Tortellini

What You’ll Need:
1 bag of tri color tortellini
1 jar of Gotham Greens pesto

What You’ll Do:
1. Boil bag of tortellini
2. Top with Gotham Greens pesto
3. Enjoy! (It’s that easy)

Sausage Pizza

What You’ll Need:
Crust from Wildfire
1 bag of shredded cheddar
1 can of pizza sauce
Package of Amylu chicken sausages with roasted garlic and asiago

What You’ll Do:
1.Remove Wildfire dough from freezer 2 hours before cooking.
2. Preheat the oven to 400 degrees
3. Slice up your precooked Amylu chicken sausages
4. Roll out the pizza dough onto baking pan (or pizza pan if you have one)
5. Spread pizza sauce on the dough and cover with shredded cheddar cheese.
6. Bake for 15-20 minutes, slice and serve!

All these recipes took no time and are sure to wow whoever you’re cooking for and they just go to show you that you don’t have to break the bank for good and good for you ingredients delivered right to your door!

    Oh my gosh! All of those recipes sound so good but that buffalo chicken lettuce cups and the sausage pizza are going to be on my list to try for sure! It’s definitely a good idea to meal prep if you’re busy, but it will help stay on budget! @alyssa_werner
