UnFried Crispy Chicken Crust Pizza

I had this crispy chicken crust pizza out at a restaurant in NYC and I’ve been dreaming of recreating it ever since. I mean, COME ON – combining chicken parmesan and pizza? GENIUS!

Not only did I completely nail it, but I made my unfried crispy chicken crust pizza SIGNIFICANTLY healthier by cutting out deep frying in oil! Oh my GAWD.

How delicious does this sound?! I cannot wait to make this again and do a BBQ version! Tell me what flavors you’d like to try in the comments!

UnFried Crispy Chicken Crust Pizza

Combining chicken parmesan and pizza while making it healthy!

Ingredients

  • 1 lb Ground Chicken Breast
  • 1/2 cup Parmesan Cheese
  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder
  • Italian Bread Crumbs
  • 1 Egg
  • Fresh Mozzarella
  • Salt
  • Pepper
  • Olive Oil Spray

Instructions

  • In a large bowl, mix together ground chicken breast with Parmesan cheese, garlic powder, onion powder, salt and pepper. Mix until well combined. Form it by placing it on top of a cookie or pizza sheet with plastic wrap on the bottom. Once shaped, top with more plastic wrap and let freeze for 1-3 hours depending on how cold your freezer is.
  • Take 3 large sheet pans and place flour in one, egg in another and seasoned Italian bread crumbs in the final one. Take your frozen chicken pizza and dredge well in all three in that order. Place onto a baking sheet with a cooling rack, spray both sides with olive oil and bake at 400 for 22 minutes.
  • Remove from oven and top with sauce and few ounces of fresh mozzarella (or reduced fat for lower points). Top with any other toppings you’d like and bake for another 5 minutes until melted, golden and bubbly!
