3 Ingredient “Everything Bagel” Chicken Tenders

Over the last few months, my 2.5 year old has gotten really excited about helping out in the kitchen. Truthfully, I feel like the luckiest Mom in the world because, as you know, my favorite thing to do is cook!

With her new found love for the kitchen, I’m always trying to think of new kid-friendly (but mom-approved) recipes to cook and eat with her. Our latest creation has me jumping up for joy because it combines two of our favorite foods, everything bagels and chicken tenders!

With just 3 simple ingredients, you can make these air fried or baked tenders in less than 30 minutes. The secret ingredient? Simple Mills Everything Sprouted Seed Crackers. I’ve been a huge Simple Mills fan for SO long and I’m always trying to think of creative ways to use their crackers, baking mixes, cookies and frosting. Did you see these funfetti cupcakes I made a few weeks ago?! I used their Chocolate Frosting and it was heaven!

Simply put, I love Simple Mills because I know that no matter which product I choose, it’s going to have ingredients that are good for me and my family. Just being able to pronounce all the ingredients on the label is such a reassuring feeling as a Mom who just wants to give my family the best food I can.All of their products are gluten free plus have better for you ingredients that work harder for your body! It’s amazing.

This recipe couldn’t be easier. I also created a “cream cheese” dipping sauce using coconut yogurt that pairs perfectly with the tenders.

It starts by pouring the Simple Mills crackers into a plastic bag and crushing them up. You could also use a food processor to make quick work of it! Put in a bowl and set aside.

Then, crack 2 eggs in another bowl and whisk.

Finally, dip the chicken tenders into the whisked egg and then into the crushed cracker crumbs. Continue until all tenders are fully coated.

Spray coated tenders both sides with your cooking spray of choice (I love non-propellant avocado oil) and air fry (or bake)!

Oh, and don’t forget the secret sauce! While your chicken is cooking, combine all your sauce ingredients together.

That’s it! It couldn’t be easier, right?!

These will be a staple in my house for SURE. You can also freeze them after you’ve cooked them and reheat them when you want to eat them again. Love that!

Everything Bagel Chicken Tenders

Ingredients

Chicken Tenders

  • 8 Boneless Skinless Chicken Tenders
  • 1 box Simple Mills Everything Sprouted Seed Crackers
  • 2 Eggs
  • Avocado Oil Spray any cooking spray will work

Cream "Cheese" Dipping Sauce

  • 1/4 cup Unsweetened Coconut Yogurt
  • 1/2 tsp Dijon Mustard
  • 1/2 tsp Apple Cider Vinegar
  • 1/4 tsp Garlic Powder
  • 1/8 tsp salt
  • 1/8 tsp pepper

Instructions

  •  Pre-heat your Airfryer to 400 degrees for 5 minutes. Pour the Simple Mills crackers into a plastic bag and crush up. You could also use a food processor to make quick work of it! Put in a bowl and set aside.
  • Crack 2 eggs in another bowl and whisk.
  • Dip your chicken tenders into the whisked egg and then into the crushed cracker crumbs. Continue until all tenders are fully coated.
  • Spray on both sides with your cooking spray of choice (I love non-propellant avocado oil) and air fry for 12 minutes at 400 degrees. If you’re baking, you would do them at 425 for about 15 minutes.
  • While your chicken is cooking, combine all your sauce ingredients together.
