Spaghetti Squash w/ Tomatoes & Caramelized Onion Gorgonzola Sauce

Spaghetti Squash gorgonzola sauce

Last night I invented a delicious dish using some of my old standby recipes and combining them together. Let me explain how it all went down…

I had a spaghetti squash that I needed to use up before it went bad. When I told Dan what I was making, he said he didn’t want a standard red sauce. Since I literally had nothing else to pair it with, it got my wheels turning. I noticed I had some heavy cream and gorgonzola cheese in my fridge and knew that my gorgonzola sauce would pair perfectly with the squash. Then I noticed an onion and thought to myself how delicious caramelized onions and blue cheese are together.

Also, I knew I wanted to add some texture so I decided to throw in some tomatoes and in the end, the dish came out perfectly.

Now I’m excited to share it with you!

Spaghetti Squash w/ Tomatoes & Caramelized Onion Gorgonzola Sauce

This delicious dish is not only easy but can be made in under one hour!

Ingredients

  • 1 Spaghetti Squash
  • 1 Large Sweet Onion caramelized
  • 1 Large Tomato

Sauce

  • 4 cups Heavy Cream
  • 4 oz Gorgonzola Cheese not creamy or dolce
  • 3 tbsp Fresh Parmesan Cheese grated
  • 1/2 tsp Kosher Salt
  • 3/4 tsp Pepper
  • 3 tbsp Fresh Parsley minced

Instructions

  • Prepare your spaghetti squash. If you don’t know how to make it, check out my post "How to Prepare a Spaghetti Squash".
  • While your squash is cooking, caramelize your onions and get your sauce ready.
  • To make the sauce, bring the heavy cream to a rapid boil in a medium sauce pan. Reduce heat slightly and let boil for the next half hour stirring every few minutes (until thick and coats the back of a spoon). Make sure to keep an eye on this because it can boil over pretty easily.
    Remove the pan from the heat. Add the gorgonzola, parmesan cheese, parsley, salt & pepper. Rapidly whisk the ingredients until cheese is melted and ingredients are combined.
  • Once squash is ready, combine it with the gorgonzola sauce, caramelized onions & tomatoes.

That’s it! This 5 star dinner will be ready in under an hour.

So the next time you’re not sure what to make for dinner, think about all the recipes you already know and combine them in new and different ways. It’s both fun and delicious!
