Quinoa Fruit Salad
The other night I had some girlfriends over and I wanted to whip up something quick, healthy and delicious for them! The problem was, I was really busy all day and didn’t have time to go to the grocery store.

What started as a stressful situation, turned into a blessing in disguise! Not only did I end up creating an amazing quinoa dish that was loaded with yummy fruit, but it was a great way for me use up the stuff I already had in my pantry. To make this dish, I literally just opened up my fridge and freezer and grabbed any fruit or nut that I thought would taste good together. I  topped it with fresh mint, a zesty dressing and it’s now going to be a staple in my cooking repertoire!

Ingredients

For Quinoa

  • 1 cup Quinoa
  • 2 cups Water
  • 1/4 cup Raisins or Dried Cranberries
  • 1/4 cup Blueberries fresh or frozen
  • 1/4 cup Mango fresh or frozen
  • 1/4 cup Strawberries fresh or frozen
  • 1/4 cup Slivered Almonds
  • A Few Torn Pieces of Mint

For Dressing

  • 1/3 cup Olive Oil
  • 1/4 cup Rice Wine Vinegar
  • Salt
  • Pepper

Instructions

  • Rinse your quinoa if needed. Add to a pot with two cups of water. Cook on high until boiling, reduce heat to low and cover for 15 minutes.
  • About half way through cooking, drop your dried cranberries or raisins in to the pot. recover. This will help them to soften and poach in the liquid.
  • While the quinoa is cooking, make your dressing! Mix together the olive oil and rice wine vinegar. Add salt and pepper to taste.
  • When the quinoa is cooked and fluffy, add your fruit and almonds. Stir in the dressing and fold in the fresh mint.
