Finnish Pancakes

Finnish PancakeIf you haven’t tried (or heard of) a Finnish Pancake, you are probably reading this a little bit confused. If you HAVE had one of these delicious beauties, then you a reading this with excitement in hopes of scoring the recipe!

For those of you who don’t know what a Finnish Pancake is, the best way I can describe it is if a crepe, pancake and omelet had a baby, it would be this pancake. It’s baked in the oven and super easy to make for large brunch. My recipe feeds 4 people, but it can easily be doubled or tripled to feed more!

I first tried the Finnish Pancake at the Big E (a huge fair in Western Massachusetts) when I was probably 6 years old. From that point on, every year, I would continue to head straight to the massive line every (and pay $5) to score a piece.

Once I got into cooking and food, I realized the Finnish Pancake was so easy to make and I could actually have it all year round (and make the entire recipe for less than $5).

Finnish Pancakes

A Finnish Pancake is like a crepe, pancake and omelet all mixed in one. This recipe is so delicious and easy to make! I bet you have all the ingredients in your kitchen right now, so give this a try!

Ingredients

  • 2 Eggs
  • 1/2 cup Whole Milk
  • 1/2 cup Flour
  • 1/4 tsp Salt
  • 1 tbsp Sugar
  • 1 tbsp Butter melted
  • 1 tsp Baking Powder

Instructions

  • Pre-heat your oven to 400 degrees . Whisk all ingredients together in a bowl until well combined (start with the eggs). The batter will be thin.
  • Pour batter into a buttered (or greased) 11 X 7 pan and bake for 30 minutes or until edges are golden brown. The pancake will be all puffed up and flatten out once it’s out of the oven.
  • Slice and serve with maple syrup and or fresh fruit.
