Fruity Pebbles French Toast

fruity pebble french toastYesterday, I had brunch with my friend, Chloe, at Flo in the Ukrainian Village of Chicago. If you haven’t check this place out…you simply need to. They had this insanely unique Fruity Pebble french toast that felt like a huge mashup of all my childhood favorites. After leaving brunch, I felt like I just had to recreate (not only for myself, but for all my readers living outside of Chicago)!

So, after brunch, off to the grocery store I went to figure out how to make this delicious dish and believe it or not, it was totally simple. I only made a few small changes to my traditional french toast recipe and I was able to get it pretty darn close!

Fruity Pebbles French Toast

This unique Fruity Pebble french toast will be a huge success next time you're hosting brunch!

Ingredients

  • Half a Loaf Brioche Bread sliced thick
  • 1/2 cup Cream
  • 1/2 cup Milk
  • 3 Eggs
  • 2 tbsp Honey
  • 1 tsp Vanilla Extract
  • Pinch of Salt
  • 2 cups Fruity Pebble Cereal
  • Cooking Spray & Butter for cooking french toast

Instructions

  • Pre-heat the oven to 375 degrees. Whisk together your cream, milk, eggs, honey, vanilla and salt in a large bowl. Put your fruity pebbles in a separate bowl.
  • Dip your thick slices of bread into the mixture. Let sit in for 30 seconds and then immediately into the fruity pebbles. Press the pebbles onto the bread to make sure they are stuck on. Let them sit for a minute or two.
  • While the french toast is resting, spray a pan with non stick cooking spray and melt 3-4 tablespoons of butter over medium heat. When the butter starts to bubble a bit, put your french toast in (don’t crowd the pan) and cook about 2-3 minutes on each side.
  • Once you’ve cooked all the french toast, place them on a cooling rack on a baking sheet and bake for 5 minutes. Top with powdered sugar, maple syrup and berries! Yum!
