Vanilla Yogurt Bread

Vanilla Yogurt Bread
This may be surprising to some of you, but I have a confession to make – I am not the world’s most confident baker. I clearly have a handle on savory food, but sweets leave me all sorts of dazed and confused.

Now, Im determined to change that. I’ve decided to step outside my culinary comfort zone and try to perfect my baking skills because I think it’s my duty as foodie to explore all realms of food.

This beautiful vanilla yogurt bread was a great start. You can pair it with any glaze, preserve, jam or jelly and it will always be a hit. The yogurt creates this creamy consistency, making it feel like you just took it out of the oven during every bite. I’m not kidding, your friends will fall in love with this bread and you can change up the flavor by adding different citrus fruits (instead of the lemon used in this recipe).

Vanilla Yogurt Bread

Ingredients

  • 1 ½ cups All Purpose Flour
  • ½ tsp Baking Powder
  • ¼ tsp Baking Soda
  • ½ tsp Salt
  • 2 Eggs
  • 1 cup Granulated Sugar
  • 2 tbsp Vanilla Extract
  • 6 oz Vanilla Greek Yogurt
  • ½ cup Vegatable Oil
  • 2 tbsp Milk or Buttermilk
  • ½ Lemon both the zest and juice

Instructions

  • Preheat oven to 350F and prep a 8 x 5 x 4 inch loaf with baking spray or flour. This will ensure the yogurt consistency of the bread doesn’t stick to the pan while locking in all that moisture.
  • In a bowl, sift together your baking powder, baking soda, salt and flour.
  • In another bowl, zest and juice your lemon it over the top of your sugar until it gets to a clumpy consistency. Then. add your eggs, vanilla, oil and buttermilk. Make sure you have a nice creamy texture to deal with, as it is important for the next step.
  • Next, you’ll add your dry ingredients and yogurt using a mixer on a low speed. First you’ll add half the dry ingredients. When they’re fully incorporated, you’ll add half of the yogurt, repeating these two steps once more until all your ingredients have been mixed in.
  • Pour into prepared pan and bake for 35-40 minutes. Be sure to watch the color! You want a light golden yellow.
  • Let the loaf cool for 10 minutes and add your favorite preserves to the top!

Be sure to use this secret weapon at your next picnic, high tea, or even as the perfect compliment to breakfast in bed!
