Sweet and Tangy Watermelon and Pear Slaw

Tangy SlawSupposedly, spring is right around the corner (although I’m still waiting to see some signs of it here in Chicago)!

Since warmer weather brings happy people wanting to BBQ, there is going to be a desperate need for a fresh and light salad to accompany all your yummy meat! Make sure you’re prepared for your next BBQ with this insanely easy and tasty side dish. I promise you will impress all your friends with this unique looking salad and once they give it a try, they’ll be even more obsessed with your “out-of-the-box” cooking skills.

Sweet and Tangy Watermelon and Pear Slaw

This fresh and light salad is perfect match for your yummy meat!

Ingredients

  • 1/2 Red Onion thinly sliced
  • 4 tbs Mint finely chopped
  • 1/4 cup Apple Cider Vinger
  • 2 tbsp Honey
  • 1/2 Lime juiced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 Orange zested and then cubed
  • 1 small Asian Pear cubed
  • 1/2 Cucumber seedless; cut in sticks
  • 1 1/2 cup Watermelon cut in sticks
  • 1 cup Jicama thinly sliced

Instructions

  • Whisk together thinly sliced onions, mint, vinegar, honey, lime juice and the zest of the orange in a small bowl. Add salt and pepper to taste.
  • Add your orange, pear, cucumber, watermelon and jicama to a large bowl and toss with dressing.
  • Serve and impress your friends’ taste buds!

This isn’t your traditional side salad, but it’s totally worth giving it a try!
