A Mediterranean Feast with Wild Garden

Wild GardenEarlier this week, I received a box of products from Wild Garden to test out (I guess my job does have its perks). I’ve always want to cook Mediterranean food, but to be honest, after purchasing all the herbs/spices that I would need to make the marinades, I end up spending way too much money.

Since Wild Garden’s marinades and sides have everything you need, I was instantly inspired and ready to take on a Mediterranean dinner! Wild Garden Wild Garden

For my Mediterranean feast, I decided to make 4 different dishes. Aren’t I ambitious? I decided on:

  • A steak shwarma naan pizza using the Wild Garden Shwarma marinade
  • A roasted Mediterranean vegetable medley using the Wild Garden Persian marinde
  • Bulgur stuffed tomatoes topped with feta cheese using the Wild Garden Bulgur
  • Wild Garden Cous Cous

Not only did everything turn out phenomenal and super authentic tasting, these marinades and sides made cooking SO easy.

Today I’m going to share the full recipe for my Steak Shwarma Naan Pizza, but before I do, here is a quick run down on how to put together the other three dishes.

Mediterranean Vegetable Medley

Wild Garden Vegetable Medley

  • Chop up your favorite vegetables and marinate them in the Wild Garden Persian marinade. I used potato, zucchini, eggplant, red onion and peppers.

  • Place on a baking dish or in a roasting dish and bake them in a 425 degrees for about 45 minutes or until tender

Bulgur Stuffed Tomatoes

  • Cook the Wild Garden Bulgur according to the instructions on the package
  • Cut the tops of the tomatoes off and remove them. Take a small knife and cut around the inside edges and remove the inner core/seeds from the tomato with a spoon. Make sure to leave the walls of the tomato intact. Fill them up with the bulgur and top with feta cheese

  • Bake in the oven at 425 for about 20 minutes

Cous Cous

  • Follow cooking directions on package and serve. Yes, it’s THAT easy

Now for the Steak Shwarma Naan Pizza! This is enough to make four small personal naan pizzas.
Naan Pizza with Wild Garden

What You’ll Need
1/2 lb of your favorite cut of steak (I used tenderloin)
1 pouch of Wild Garden Shwarma Marinade
1 Cucumber, 3/4 sliced and 1/4 chopped up tiny
Xoz plain greek yogurt
1/2 clove of garlic, minced
1 tablespoon dill
1 teaspoon of lemon juice
2 pieces of store-bought Naan Bread
Hummus (you can use my recipe or purchase pre-made from the store)
1 Tomato, diced
1 onion, thinly sliced and sautéed util soft
Feta Cheese

What You’ll Do

1. Marinate your steak. The entire package can do 3lbs of meat and you don’t have to marinate it long at all to infuse the flavors! Since my husband is a vegetarian, I also used it to marinate his fake meat

2. Make your tzatiki sauce. To do this, simply mix together your greek yogurt, tiny chopped up cucumbers, garlic, dill and lemon juice. Put in the fridge while you cook the rest of the dish and let the flavors marry

3. Grill up your steak however you like it best and slice it

4. Warm naan in the oven or throw it on the grill for a few minutes

5. Top the naan with hummus, cucumber, thinly sliced onion, tomato, steak, tzatiki and feta cheese
