Mini Pizza Pop-Tarts

August 15, 2018 By ericaeckman

True Story: I’m addicted to pizza.

I recently got my air fryer and was brainstorming how I could make a healthier version of this highly addictive kryptonite of mine. Then it hit me, I could put all my favorite pizza ingredients in a little pop-tart form.

Let’s be honest, a healthy, less guilt pizza is what we all dream of. This entire recipe makes 48 pop-tarts and they are less than 20 calories a piece (18 to be exact)! If you’re doing weight watchers, 2 of these babies is just 1 point.

Start by cutting your eggroll wrappers.

Try and keep the stacks matched up for easier assembly.

Dice the pepperoni.

Take the marinara sauce and add it to the center of one of the wrapper squares, sprinkle some mozzarella then add your diced pepperoni.

Dip your finger into the water and trace along the edge of the wrapper, then place it over the wrapper with the ingredients.

Don’t forget to pinch really well around the edges so none of that deliciousness gets out.

Brush either side of the ravioli with olive oil and place into the air fryer.

Serve with a side of marinara for dipping!

They came out just as I had hoped and I highly recommend you giving these a try! What should I stuff in these cute little pop-tarts next?!

Ingredients

  • 8 Eggroll Wrappers
  • Marinara Sauce Of Your Choice I like Raos
  • Mozzarella Cheese shredded
  • Pepperoni
  • Olive Oil
  • Mini Bowl Of Water

Instructions

  • Get Prepped! Start by cutting your eggroll wrappers into 4 vertical strips and the again into 3 horizontal strips, try and keep the stacks matched up for easier assembly.
  • Dice the pepperoni.
  • Take a 1/4 tsp of marinara sauce and add it to the center of one of the wrapper squares, sprinkle some mozzarella then add your diced pepperoni.
  • Dip your finger into the water and trace along the edge of the other wrapper. Then place it over the wrapper with the ingredients and pinch really well around the edges so none of that deliciousness gets out.
  • Repeat for desired amount!
  • Brush either side of the ravioli with olive oil and place into the air fryer, be sure they aren’t overlapping. I was able to fit in about 10 at a time.
  • Put in your air fryer at 380 degrees for 4 minutes then flip and allow to cook for another 2 minutes.
  • Serve with a side of marinara for dipping!

Love always,
Erica
