Every once in a while, I create a recipe that makes me want to give myself a hug. Well guys, this elote is one of them.
It all started last weekend when my friend and fellow food blogger, Brett (www.hertastylife.com), said we should have a taco night. Since I’m always down for a good Mexican fiesta and I’ve heard rumors that this girl can make some serious carne asada, it was a no brainer to say yes.
The only fear I had was that my side dish wouldn’t live up to her famous tacos (if you think I’m kidding, these tacos even have their own yelp review). I decided to try to make one of my FAVORITE mexi-sides, elote. If you don’t know what elote is, it’s basically like a tangy, cheesy corn casserole.
This dish was SO good, our husbands actually left mid-dinner to go out and buy more corn so that we would make some more elote. I feel like that’s the biggest compliment you can receive!
Mexican Elote
Ingredients
- 12 ears Corn
- 1 cup Mayo
- 1/2 cup Whipped Butter
- 1 cup Cotija Cheese
- 2 Limes juiced
- Cilantro if you don’t hate it like I do
- Pimenton its a spicy paprika; use this to taste
Instructions
- Grill your corn. You can do this on the grill or over your stove. You just want to to be nice and charred.
- Cut the corn off the cob into a bowl.
- Add the mayo, whipped butter, cotija cheese, cilantro and lime juice. Top with pimenton to taste.
