Mexican Elote

This recipe will become a staple side dish whenever you’re cooking Mexican food!

Ingredients
  

  • 12 ears Corn
  • 1 cup Mayo
  • 1/2 cup Whipped Butter
  • 1 cup Cotija Cheese
  • 2 Limes juiced
  • Cilantro if you don’t hate it like I do
  • Pimenton its a spicy paprika; use this to taste

Method
 

  1. Grill your corn. You can do this on the grill or over your stove. You just want to to be nice and charred.
  2. Cut the corn off the cob into a bowl.
  3. Add the mayo, whipped butter, cotija cheese, cilantro and lime juice. Top with pimenton to taste.
