Un-fried Eggroll Recipe

Call me what you will (my husband would say major nerd), but testing out the latest and greatest kitchen gadgets is definitely a hobby of mine. I always want to know first hand if it will save me time, save me calories, and be worth it for foodies and beginner cooks alike.

Cue the air fryer. As someone who has a hard time passing up a fried anything, I really truly thought it was too good to be true. Naturally, I had to see for myself so I managed to get one delivered to my house in a matter of days,

One of my first attempts with the air fryer was egg rolls. They’re pretty healthy in theory, until you stick them in an oil vat and fry the you know what out of them. I couldn’t be happier I tried these, because they turned out even better than I could’ve imagined. They’re crunchier, less greasy, and I have zero guilt whipping them up for us on a week night.

Ingredients

  • 1 tbsp Canola or Olive Oil
  • 1/2 cup Scallions chopped
  • 1 tbsp Garlic minced
  • Handful of Shiitake Mushrooms diced
  • Handful of Crimini Mushrooms diced
  • 1/2 Ground Chicken Breast
  • 1 tbsp Tamari Sauce
  • 1 tbsp Teriyaki Sauce
  • 2 tsp Sesame Oil
  • 1 bag Coleslaw Mix with Carrots shredded
  • Pinch of Salt
  • Pinch of Pepper
  • Eggroll Wrappers

Instructions

  • Over medium heat, coat pan in your oil and combine scallions, minced garlic, and minced ginger. Cook until fragrant (about 1 minute).
  • Add in shiitake and crimini mushrooms. Cook for 3 minutes then add ground chicken breast.
  • Once the chicken is no longer pink, add tamari sauce, teriyaki sauce and sesame oil. Mix around until coated and then add in desired amount of shredded coleslaw mix with shredded carrots. Finish with salt and pepper to taste. Cook for 1 more minute. Move to a bowl and let cool.
  • Once cooled, roll your eggrolls in an eggroll wrapper and brush with oil (a little goes a long way!) Place in the airfryer at 390 degrees for 8 minutes. Flip and cook again for another 5 minutes.
  • Serve and enjoy! I usually like to dip in a sweet chili sauce, it gives it that perfect flavor combination of sweet and spicy.
