Grape-Nuts Waffle w/ Peach and Cranberry Compote

If you ask any nutritionist or personal trainer, they are going to tell you that breakfast is one of the most important meals of the day. Whether you like it or not, if you want to maintain a healthy lifestyle, you really need to start your day with a solid breakfast.

One of my favorite ways to start out my morning is using my waffle maker! Since today is #WaffleDay (yes that’s a thing), I figured I would share one of my favorite nutritious and protein-packed recipes. My latest obsession/creation is this waffle using Grape-Nuts Cereal and topping it with a warm peach and cranberry compote.

Grape-Nuts Waffle w/ Peach and Cranberry Compote

One of my favorite, nutritious and protein-packed recipes to have for breakfast!

Ingredients

Waffle

  • 3/4 cup Post Grape-Nuts cereal
  • 1-1/2 cup All Purpose OR Whole Wheat Flour
  • 2 tbsp Granulated Sugar
  • 1 tbsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Cinnamon
  • 1/2 tsp Salt
  • 1-3/4 cups Almond Milk
  • 6 tbsp Vegetable Oil
  • 2 Eggs lightly beaten

Compote

  • 2 Peaches cut into small cubes
  • 1/4 cup Cranberries dried
  • 1/3 cup Honey
  • 1 tbsp Sugar
  • 1 tbsp Unsalted Butter
  • 1/4 tsp Ground Cinnamon
  • 1/4 tsp Ground Nutmeg

Instructions

  • Combine all the compote ingredients into a small pot. Simmer over medium/low heat for 10-15 minutes until peaches break down, the cranberries are soft and the mixture becomes thick. Keep warm over low heat while preparing the waffles.
  • In a blender or food processor, process Grape-Nuts until well ground.
  • In a large bowl, combine ground Grape-Nuts, flour, sugar, baking powder, baking soda, cinnamon and salt. Add almond milk, oil and eggs and combine until smooth. Let the batter rest 5 minutes before using.
  • Heat up your waffle iron to medium and pour batter into the center of the lower grid. Close lid of waffle iron and cook until golden brown. Open lid and carefully remove baked waffle. Repeat with remaining batter. Serve immediately, topped with warm peach compote.

I decided to go the extra mile and top mine with Grape-Nuts Fit granola. It added a nice crunch! If you’re a fan of Grape-Nuts like me, here is a link for more recipes that incorporates this delicious cereal! Yum!
