Combine all the compote ingredients into a small pot. Simmer over medium/low heat for 10-15 minutes until peaches break down, the cranberries are soft and the mixture becomes thick. Keep warm over low heat while preparing the waffles.
In a blender or food processor, process Grape-Nuts until well ground.
In a large bowl, combine ground Grape-Nuts, flour, sugar, baking powder, baking soda, cinnamon and salt. Add almond milk, oil and eggs and combine until smooth. Let the batter rest 5 minutes before using.
Heat up your waffle iron to medium and pour batter into the center of the lower grid. Close lid of waffle iron and cook until golden brown. Open lid and carefully remove baked waffle. Repeat with remaining batter. Serve immediately, topped with warm peach compote.
