Skinny Banana Bread

There’s nothing better than a fresh loaf of skinny banana bread on a cozy morning in! If you’re a busy mom like me, sometimes life happens and you find yourself with an empty fridge and overripe bananas on the counter.

The solution? This amazing skinny banana bread! It’s always a crowd favorite, even with a picky toddler like Elia.

This recipe is only 14 weight watcher points for the ENTIRE loaf (about 1 per slice) and less than 100 calories per slice. The secret is super super ripe bananas (outside is mostly dark). It eliminates the need for much sugar at all

Skinny Banana Bread

This recipe is only 14 weight watcher points for the ENTIRE loaf (about 1 per slice) and less than 100 calories per slice. The secret is super super ripe bananas (outside is mostly dark). It eliminates the need for much sugar at all!

Ingredients

  • 4 ripe bananas
  • 1/2 tsp salt
  • 1 egg
  • 1 tbsp vanilla extract
  • 2 tbsp dark brown sugar
  • 1/2 tbsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2/3 cup flour

Instructions

  • Take 4 super duper ripe bananas and mash them with 1/2 teaspoon of salt with a potato masher till you get a pudding consistency. Add in 1 egg. And combine completely.
  • Then add in 1 tablespoon of vanilla extract, 2 tablespoons of dark brown sugar, 1/2 tablespoon of cinnamon, 1 teaspoon of baking powder and 1 teaspoon of baking soda. Mix until well combined.
  • Add 2/3 cup of flour (I use all-purpose) and gently fold in until well combined mixed through. SIDE NOTE: I haven’t tried it with GF flour, almond flour, coconut flour or anything else. So don’t ask if they work, just try it yourself! Pour into a greased bread pan and bake for 30 min at 350!
