In a large bowl, mix together ground chicken breast with Parmesan cheese, garlic powder, onion powder, salt and pepper. Mix until well combined. Form it by placing it on top of a cookie or pizza sheet with plastic wrap on the bottom. Once shaped, top with more plastic wrap and let freeze for 1-3 hours depending on how cold your freezer is.
Take 3 large sheet pans and place flour in one, egg in another and seasoned Italian bread crumbs in the final one. Take your frozen chicken pizza and dredge well in all three in that order. Place onto a baking sheet with a cooling rack, spray both sides with olive oil and bake at 400 for 22 minutes.
Remove from oven and top with sauce and few ounces of fresh mozzarella (or reduced fat for lower points). Top with any other toppings you’d like and bake for another 5 minutes until melted, golden and bubbly!
