1Pie Crust
1Sweet Potatoextra large
1Clove of Garlicminced
1/2cupMilk
1tbspButter
1tspCinnamon
1tspChili Powder

1earFresh Cornor 1/2 cup frozen
1/2cupFresh or Frozen Peas
4ozFrozen Pearl Onionswhole caramelized onion
Salt and Pepperto taste
Instructions
Pre-heat your oven to 375.
Par-bake your crust. Place a piece of parchment paper over your pie crust and pour in some pie weights or dried beans. Bake until the edges of the crust are just starting to turn golden, about 10 minutes. Remove from the oven and take out the pie weights.
While the crust is par-baking, cube and boil your sweet potatoes until fork tender. Mash them with 1 clove of minced garlic, milk, butter, cinnamon and chili powder.
In a large skillet over medium heat, use the olive oil and combine your corn, peas and onions until warmed through. Add your Curly’s RoadTrip Eats West Coast Style and mix together.
Pour BBQ mixture into pie crust and top with mashed sweet potatoes.
