Portillo’s Chopped Salad Copycat

Ingredients

  • Chopped Romaine Lettuce
  • Chopped Iceberg Lettuce
  • Thinly Sliced Red Cabbage
  • Diced Fresh Tomatoes
  • Thinly Diced Scallions
  • Diced Up Cooked Bacon
  • Blue Cheese
  • Ditalini Pasta cooked

Copy Cat Portillo’s House Dressing

  • 1/2 cup Red Wine Vinegar
  • 2 tbsp Honey
  • 1 tsp Sugar
  • 1 tsp Italian seasoning dried
  • 2 cloves Garlic smashed and chopped
  • 3/4 cup Olive Oil
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions

  • Combine all dressing ingredients blender (except the olive oil) and blend start to blend on a low setting. Slowly drizzle in the olive oil and once it’s all in the blender, turn it on high and let emulsify for 30 seconds to a minute (until it becomes creamy).
  • Combine the iceberg, romaine, cabbage, tomatoes, scallions, cooked bacon, blue cheese and cooked pasta in a large bowl.
  • Top with dressing and serve!
