Portillo’s Chopped Salad Copycat

- Chopped Romaine Lettuce
- Chopped Iceberg Lettuce
- Thinly Sliced Red Cabbage
- Diced Fresh Tomatoes
- Thinly Diced Scallions
- Diced Up Cooked Bacon
- Blue Cheese
- Ditalini Pasta cooked
Copy Cat Portillo’s House Dressing
- 1/2 cup Red Wine Vinegar
- 2 tbsp Honey
- 1 tsp Sugar
- 1 tsp Italian seasoning dried
- 2 cloves Garlic smashed and chopped
- 3/4 cup Olive Oil
- 1 tsp Salt
- 1 tsp Pepper
Combine all dressing ingredients blender (except the olive oil) and blend start to blend on a low setting. Slowly drizzle in the olive oil and once it’s all in the blender, turn it on high and let emulsify for 30 seconds to a minute (until it becomes creamy).
Combine the iceberg, romaine, cabbage, tomatoes, scallions, cooked bacon, blue cheese and cooked pasta in a large bowl.
Top with dressing and serve!
