Tomato, Corn & Brie Pasta
This dish has crunch, sweetness, tang and creaminess all on one epic plate. It’s also great to make for a crowd because it is relatively inexpensive!

- 4 Tomatoes cut into 1/2 inch cubes
- 4 Large Ears of Corn shucked
- 1 pound Brie Cheese rind removed, cut into pieces
- 1 cup Baby Arugula fresh
- 3 Garlic Cloves peeled and finely minced
- 1 cup Olive Oil
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1 1/2 pounds Your Favorite Pasta I like using fresh spaghetti
Combine tomatoes, corn, brie, garlic, 1 cup olive oil, salt and pepper in a large bowl. Let sit covered at room temperature for at least an hour.
Bring a large pot of water to a boil Add your pasta of choice and cook according to directions on box (if using fresh pasta, just cook for 2-3 minutes).
Drain pasta and immediately toss with the tomato and brie mixture. Gently mix in some fresh arugula and serve!
