Potato & Chive Waffles and Fried Chicken w/ Apple Honey Compote

Ingredients

  • 1 package Urban Accents Flapjack Mix, Potato Cheddar and Chive
  • 4 Eggs
  • 1.5 cups Milk
  • 2 tbsp Olive Oil
  • 8 Chicken Tenders
  • Flour
  • Panko Bread Crumbs
  • 3 Apples peeled and diced
  • 2 tbsp Honey
  • 1 tsp Cinnamon
  • 1 tsp Nutmeg
  • Salt to taste
  • Maple Syrup

Instructions

  • Prep your waffles! Whisk the entire package of flapjack mix with 2 eggs, milk and olive oil. Set aside.
  • Get your apple chutney going! In a small pot, mix the apples, honey, cinnamon, nutmeg and a pinch of salt. Cook over low heat, stirring occasionally, for 15 minutes or until softened. It will almost be like a thick applesauce.
  • Make your chicken! Pre-heat the oven to 350 degrees. Place the flour, 2 eggs and panko bread crumbs in three separate bowls. Using tongs, carefully dip each chicken breast in the egg, then the flour and then the breadcrumbs. Set aside on a plate until all chicken tenders are breaded.
  • Cook the chicken! Cover the bottom of a large, deep sauté pan with olive oil. Heat over medium high heat until it starts to smoke. Carefully add chicken being careful not to overcrowd the pan. Let cook on one side until golden brown (about 3 minutes) then flip over. Once golden brown on the other side, place on a baking sheet with a wire rack. You may have to do this in two batches.
  • Once all the chicken is cooked and on the wire racks, place the baking sheet in the oven for 10 minutes or until chicken is totally cooked.
  • While chicken is cooking, make your waffles (according to the directions of your waffle maker).
  • Assemble your dish! Top your waffle with the apple chutney mixture and top with two pieces of chicken! Drizzle with a little maple syrup.
