Mexican Elote

Ingredients

  • 12 ears Corn
  • 1 cup Mayo
  • 1/2 cup Whipped Butter
  • 1 cup Cotija Cheese
  • 2 Limes juiced
  • Cilantro if you don’t hate it like I do
  • Pimenton its a spicy paprika; use this to taste

Instructions

  • Grill your corn. You can do this on the grill or over your stove. You just want to to be nice and charred.
  • Cut the corn off the cob into a bowl.
  • Add the mayo, whipped butter, cotija cheese, cilantro and lime juice. Top with pimenton to taste.
