Quinoa Fruit Salad
To make this dish, I literally just opened up my fridge and freezer and grabbed any fruit or nut that I thought would taste good together. I topped it with fresh mint, a zesty dressing and it’s now going to be a staple in my cooking repertoire!

For Quinoa
- 1 cup Quinoa
- 2 cups Water
- 1/4 cup Raisins or Dried Cranberries
- 1/4 cup Blueberries fresh or frozen
- 1/4 cup Mango fresh or frozen
- 1/4 cup Strawberries fresh or frozen
- 1/4 cup Slivered Almonds
- A Few Torn Pieces of Mint
For Dressing
- 1/3 cup Olive Oil
- 1/4 cup Rice Wine Vinegar
- Salt
- Pepper
Rinse your quinoa if needed. Add to a pot with two cups of water. Cook on high until boiling, reduce heat to low and cover for 15 minutes.
About half way through cooking, drop your dried cranberries or raisins in to the pot. recover. This will help them to soften and poach in the liquid.
While the quinoa is cooking, make your dressing! Mix together the olive oil and rice wine vinegar. Add salt and pepper to taste.
When the quinoa is cooked and fluffy, add your fruit and almonds. Stir in the dressing and fold in the fresh mint.
