Ingredients
1cupCooked White Ricetotally cooled for at least an hour
1tbspSesame Oil
1tbspVegetable Oil
1tbspGingerminced
1tbspGarlicminced
1Scallionwhites and greens separated
1/2cupSoy Sauce
1Oniondiced or sliced (however you like it)
1/2cupPeasfrozen
1/2cupPineapplediced in small chunks
2Eggs
Salt and Pepperto taste
Instructions
In a extra large skillet or wok, heat up the vegetable oil and sesame oil over high heat. Add the diced onion, garlic, ginger, pineapple & white part of the scallions. Cook for a minute.
Add in your cooked, cooled rice and soy sauce. Spread it out evenly in the pan and don’t touch it for a few minutes (this will let it get crispy. Once you get it crispy, start tossing it around with tongs to get everything incorporated.
Push the fried rice over to the sides of the skillet/wok and crack your two eggs in the center. Quickly scramble them around and incorporate them into the rice. Add your frozen peas and cook for another minute or two.
