Pineapple Fried Rice

Ingredients

  • 1 cup Cooked White Rice totally cooled for at least an hour
  • 1 tbsp Sesame Oil
  • 1 tbsp Vegetable Oil
  • 1 tbsp Ginger minced
  • 1 tbsp Garlic minced
  • 1 Scallion whites and greens separated
  • 1/2 cup Soy Sauce
  • 1 Onion diced or sliced (however you like it)
  • 1/2 cup Peas frozen
  • 1/2 cup Pineapple diced in small chunks
  • 2 Eggs
  • Salt and Pepper to taste

Instructions

  • In a extra large skillet or wok, heat up the vegetable oil and sesame oil over high heat. Add the diced onion, garlic, ginger, pineapple & white part of the scallions. Cook for a minute.
  • Add in your cooked, cooled rice and soy sauce. Spread it out evenly in the pan and don’t touch it for a few minutes (this will let it get crispy. Once you get it crispy, start tossing it around with tongs to get everything incorporated.
  • Push the fried rice over to the sides of the skillet/wok and crack your two eggs in the center. Quickly scramble them around and incorporate them into the rice. Add your frozen peas and cook for another minute or two.
  • Serve with green part of scallion.
