Ingredients

  • 2 cups Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 cup Butter one stick; room temperature
  • 2/3 cup Brown Sugar
  • 1/3 cup White Sugar
  • 2 Eggs beaten
  • 2 1/3 cups Mashed Over Ripe Bananas about 5
  • 1 tsp Cinnamon

Instructions

  • Pre-heat the oven to 350 degrees. In a large bowl, combine the flour, baking soda and salt.
  • In a separate bowl, cream together the butter and sugar. It’s super simple. I did it by hand.
  • Once the butter is creamed, add your two beaten eggs and mashed bananas and combine until smooth. You can use a hand mixer for this to make it faster or just do it by hand. Just make sure it’s smooth.
  • Once the banana/butter mixture is smooth, pour it into the flour mixture and stir till well combined. Add the cinnamon and give it one more stir. The batter will be thick.
  • Pour batter into a loaf pan (mine is 10 X 5). Bake for 50-60 minutes until golden brown. You can test if it’s done by sticking a toothpick in the center. If it comes out smooth, it’s cooked.
