Place the grated potato, onion, cheddar, garlic, flour, baking powder and eggs in a large bowl. Combine ingredients until mixed thoroughly (using your hands is easiest).
In a large skillet, heat up the peanut oil. Use enough to cover the entire base of the pan. Once the oil is hot, take a golf ball sized-amount of the mixture and place it in the hot oil. After about 1 minute, flatten with a spatula.
Once flattened, let cook for about 2 minutes (until brown). Flip over and let the other side brown up and cook through.
Remove from hot oil and let drain on a paper towel. Serve warm with cool sour cream and enjoy!
