Preheat your oven to 300 degrees and put a cooling rack on top of your baking sheet.
Carefully remove the stems from the kale and shred into bite-sized pieces.
Wash your kale and let it dry thoroughly. If you have a salad spinner, use that (if you don’t have one of these, you should get one)!
Place kale in an oversized zip-lock bag or bowl with a lid. Add your olive oil, lemon zest, garlic powder, salt and pepper. Seal the bag or bowl and shake to coat the kale.
Place kale on the cooling rack and bake until the edges are brown (about 15-20 minutes).
