Instructions
Pasta Dough
In a bowl or on a counter top, add semolina flour. Make a hole (or well) in the center and add a drizzle of olive oil. Slowly add in warm water a little at a time and incorporate it in. Once it comes together, kneed for 10 minutes until smooth. Wrap in plastic and put in fridge for up to 24 hours. Give it at least 30 minutes before you move on to step 3. This pasta is about 5 points per serving (makes 6 servings)
Cut up the dough and roll it into even logs. Then, slice them up into little bits, about a quarter inch, and make them into little hats. Make sure to slice them up evenly.
Once they're all sliced up, you're going to put the side of the knife onto the dough and pull it towards you, as if you were scooping. Once it comes over your knife, use your thumb to flip it back and form it until you get a "little hat". When ready to cook pasta, just boil water and cook until they float! Fresh pasta usually cooks in about 3 minutes.
Chicken Parmesan
Pound your chicken! The key to good chicken parmesan is getting a thin chicken. You can buy a chicken cutlet or you could just pound out a chicken breast super thin. I put the chicken in a zip lock bag use the back of a pot to flatten it!
Coat your chicken in flour, then egg and then seasoned bread crumbs. Spray with olive oil spray and place on a foil lined baking sheet. Bake at 375 degrees for 20 minutes or airfry at 400 for 15 minutes.
Top it off! I use my homemade tomato sauce (found in the “tomato sauce” IG story highlight). If you wanna keep it super skinny, use reduced fat shredded mozzarella.
