Pineapple Fried Rice

Ingredients
  

  • 1 cup Cooked White Rice totally cooled for at least an hour
  • 1 tbsp Sesame Oil
  • 1 tbsp Vegetable Oil
  • 1 tbsp Ginger minced
  • 1 tbsp Garlic minced
  • 1 Scallion whites and greens separated
  • 1/2 cup Soy Sauce
  • 1 Onion diced or sliced (however you like it)
  • 1/2 cup Peas frozen
  • 1/2 cup Pineapple diced in small chunks
  • 2 Eggs
  • Salt and Pepper to taste

Method
 

  1. In a extra large skillet or wok, heat up the vegetable oil and sesame oil over high heat. Add the diced onion, garlic, ginger, pineapple & white part of the scallions. Cook for a minute.
  2. Add in your cooked, cooled rice and soy sauce. Spread it out evenly in the pan and don’t touch it for a few minutes (this will let it get crispy. Once you get it crispy, start tossing it around with tongs to get everything incorporated.
  3. Push the fried rice over to the sides of the skillet/wok and crack your two eggs in the center. Quickly scramble them around and incorporate them into the rice. Add your frozen peas and cook for another minute or two.
  4. Serve with green part of scallion.
