QUICK Oven Roasted Tomato Sauce

I guarantee this sweet and spicy roasted tomato sauce will convince you to leave the jarred stuff on the shelf.

Ingredients
  

  • 2 pints Cherry Tomatoes
  • 1 tbsp Olive Oil
  • 2 tsp Sugar
  • 1 tsp Kosher Salt
  • 1 tsp Pepper
  • Red Pepper Flakes to taste depending on how spicy you like it

Method
 

  1. Preheat your oven to 375 degrees. Lay your cherry tomatoes out on a sheet pan and drizzle with olive oil. Toss around until well coated. Season with sugar, salt and pepper.
  2. Bake for 30-45 minutes until tomatoes are soft and begin to wrinkle/burst. Remove from oven and immediate transfer to a deep bowl.
  3. With a potato masher (or back of a fork), gently start to smash the tomatoes until a sauce is formed. You can make it as smooth or as chunky as you like it. Add your red pepper flakes for heat.
