Watermelon and Feta Quinoa Salad

This dish has unique components that perfectly balance together and create something really spectacular. It’s also really healthy too!

Ingredients
  

  • 1 cup Quinoa
  • 1 1/2 cups Water
  • 1/2 pound Watermelon cubed
  • 1/4 cup Feta Cheese crumbles
  • 2 tbsp Mint
  • 1/2 cup Rice Wine Vinegar
  • 2 tbsp Lime Juice
  • Salt and Pepper to taste

Method
 

  1. Cook up your quinoa! Just take your quinoa and water and boil it on high. Once boiling, reduce heat to medium low, cover it and let it cook for about 15 minutes (or until all the water is absorbed).
  2. Make your dressing. Whisk together the rice wine vinegar and lime juice.
  3. Mix together your quinoa, watermelon, feta, mint and dressing. Serve warm or cold.
